It's been a while since I've posted! I cannot believe it's already March 2023. So many adventures and life changes, but it's about time I started blogging again. Most recently, I've had a new role at work, traveled every month since November, and moved to the city of Chicago right before that. That doesn't mean the baking has stopped, but it does mean that cooking has begun. Stay tuned for some savory recipes coming your way.
The Inspiration
Matcha has been popular in coffee shops for years now, and I'm seeing the slow trickle into mainstream spaces as well. It's a very common ingredient in sweets in Asia but I feel like it can be incorporated into more baked items. This week I tried incorporating matcha into a favorite texture and baked good - the sugar cookie!
Here's a take on a soft and chewy matcha sugar cookie. This recipe makes about 24 cookies!
2.5 cups all-purpose flour
2.5 tbsp matcha powder
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1.5 tsp vanilla
1 cup room temperature unsalted butter
1 cup sugar
1.5 tbsp brown sugar
1 egg
1/4 cup sugar set aside to coat with
How to:
Preheat the oven to 350F and line a baking tray with parchment paper. Set aside.
Whisk together the flour, baking powder, baking soda, salt, and matcha. Set aside.
Whisk together the butter and sugars until light and fluffy in a stand mixer ~ 2 mins.
Add the egg and vanilla and mix until combined.
Add the dry ingredients and continue mixing until dough consistency.
Roll the dough into 1.5 in balls, and roll around in sugar until lightly coated. Don't press too hard or it'll become too sweet!
Place onto the prepared baking tray ~2 inches apart. Bake for 12 - 15 minutes.
Allow to cool on the baking tray for 5 - 10 minutes before transferring to a wire rack to cool completely.
