Check out this delicious take on a cookie. People make cookies and cream cake and cookie cakes but I've never seen a chocolate chip cookie cake and wanted to make one for myself.
Last year, I made my neighbor a cookies and cream cake covered in the best Oreo frosting I could make and filled with a chocolate mousse. This year, I really wanted to take another step and give justice to my favorite cookie in cake form -- the chocolate chip cookie.
This cake ended up being a combination of flavors that are just meant to go together. It is a chocolate chip cookie cake - the recipe turned out a little dry, so I will post the recipe here once I get it right. I really wanted this cake to taste more like the flavors you get when a chocolate chip cookie is dipped in milk. To get that melty milky flavor -- I ended up actually taking a bunch of cookies and soaking them in milk and adding that (strained) mixture into the cake batter as a liquid substitute.
The cake layers were filled with chocolate butter cream and crushed cookies. Then, I covered the cake in a brown sugar and vanilla American buttercream. Last but not least, I topped it with a classic chocolate ganache drip and mini chips ahoy as decor!
